Spartan Cooking Club- CARROT PUDDING*

CARROT PUDDING
INGREDIENTS:
Carrots- 2lbs grated 
Whole milk- 1/2 gallon
Sugar- 1 1/2 cups
Cardamom powder
 (pinch)
Cashew & Almonds- 10 pieces of each
DIRECTIONS:
1. Pour the milk in a non-stick saucepan, add in carrots and cook over medium heat.
2. When milk starts boiling, reduce the heat and simmer uncovered until the carrots are tender and most of the milk is absorbed (45 minutes).
3. Add in the sugar and Cardamom.. Stir constantly until the sugar is dissolved and the mixture thickens.
4. Remove the mixture from heat and pour into a serving dish. Garnish with cashews and almonds. Serve warm.
